Quinoa Breakfast Bar

Ingredients (6-8 bars)

  • 1/3 cup organic unsweetened applesauce
  • 1/2 tsp vanilla
  • 1 egg
  • 1/3 cup peanut or almond butter
  • 1/4 cup brown rice syrup, honey or agave
  • 1/2 cup garbanzo bean flour
  • 1 cup cooked quinoa
  • 1 cup rolled oats (can use gluten free oats)
  • 1/2 cup nuts, chopped
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 Tbsp ground chia seeds or ground flax seeds
  • 1/2 cup raisins or cranberries

Instructions

  1. Combine applesauce, vanilla, egg , nut butter and brown rice syrup in a bowl and mix well.
  2. Add the remaining ingredients and stir until just mixed.
  3. Spoon into a buttered 8×8 pan and bake at 375° for 20-25 minutes, or until golden brown.
  4. Let cool and cut into 6 to 8 bars.
  5. Store in the refrigerator.

Note: Need a larger batch double the recipe and cook in a 9×13 pan
